Saraccos builds that room on purpose, puts the most ambitious dining floor in the city directly beneath it, and connects the two with a ladder anyone on the payroll can climb. Dinner with tact, taste and outcomes.
Level One / The engine
Steakhouse prestige at approachable volume. Dry-aged steaks and handmade pastas, families next to founders, wealth-firm dinners next to first dates. The floor funds the building, feeds the brand, and auditions its own future owners.
Level Two / The incubator
Annual membership, $50–100K, application and invitation only. Executives bring partners and investors upstairs to negotiate over steak and whiskey — private lounges, deal suites, out-of-service commodities, total discretion.

The DNA is deliberate: borrow what each category leader does best, and refuse the rest.
Partnership Layer
The best tables in the house are card-tier tables — underwritten by the payment networks competing for the same affluent diner we seat every night.
Revenue: placement fees, card-linked offers and co-marketing funded by the networks — cardholder perks, never data sales. Networks buy verified affluent foot traffic; Saraccos gets subsidized acquisition and guaranteed premium occupancy.
The People Engine
We don’t hire servers.
We hire founders who haven’t started yet.
Every hire on the floor is selected for identity — people who intend to own something. A voluntary slice of each paycheck flows into a mentorship fund that pays for their coaching, courses and company formation. The ambition in the room isn’t a vibe; it’s on the org chart.
Recruited on ambition and character, not résumé length.
